Ingredients
For the egg fried rice
- I cup overnight cooked rice (The grain of overnight rice is drier and not starchy and sticky like freshly made steamed rice. This will ensure that your fried rice is soft and fluff and not lumpy.
- 2 large eggs
- 1 small diced onions
- 1/4 cup frozen mixed vegetables
- Luncheon meat/spam
- Cod Fish
For the seasonings
- 1/2 tablespoons soy sauce
- 1/2 teaspoon five-spice powder
- 1/2 teaspoon sesame oil
- 3 dashes white pepper
Instructions
- Heat 1/2 tablespoon of the oil in a wok over high heat and cook the eggs first
- Set aside the eggs
- Reheat the wok with 2 tablespoons of oil and stir-fry the garlic until aromatic. Add the cod fish and luncheon meat and fry until light brown before adding mixed vegetables
- Stir to combine well
- Stir in the rice and add in the seasonings
- Stir in the eggs and combine with the rice
