Minced Pork Congee

Ingredients

For the Soup Base

  • Handful of Ikan Bilis
  • 5 Dried Scallop
  • Three red dates, pitted 

For the porridge

  • 1/4 Rice
  • half Carrot

For the Pork

  • 70g of minced pork
  • Seasoned with Lilo whitebait powder

Instructions

  • Soak the dried scallop in warm water for 30 minutes till soft (so that you can tear the scallops into their smaller muscle fibers to add to the rice cooker)
  • Add carrot and rice to the rice cooker
  • Combine red dates, ikan bilis in a soup bag and add to rice cooker
  • Transfer the scallop (and the soaked water) to the rice cooker.
  • 10 minutes before the porridge is done, add it the minced pork
