White Bee Hoon

Ingredients

For the soup base

  • Frozen soup stock
  • Handful of Ikan Bilis or powder
  • 5 Dried Scallop

For the white bee hoon

  • Soaked Bee Hoon
  • Meat
    • 1/2 Chicken fillet
    • 1/2 Pork fillet or 60g minced pork
    • 1/4 fish fillet
  • 1 Shrimp
  • 1 Egg
  • Choy Sim / Broccoli

Instructions

  1. Soak the dried scallop in warm water for 30 minutes till soft (so that you can tear the scallops into their smaller muscle fibers to add to the pot)
  2. Heat 1/2 tablespoon of the oil in a wok over high heat and stir-fry the garlic until aromatic
  3. Fry the bee hoon for 5 minutes and set aside
  4. Reheat the work and fry the meat and shrimp and set aside
  5. Combine soup stock, dried scallop and its soaked water and ikan billis (or add ikan billis powder)
  6. Add Bee Hoon
  7. Add Egg
  8. Add vegetables
  9. Add meat and shrimp
  10. Cool and Serve
